For the fish, thoroughly coat salt & pepper, cornstarch & water.
Heat oil in a pan. Fried the fish till golden brown in color.
Drain the liquid from the salted beans.
Saute garlic, ginger, and onion. Add salted beans.
Add carrots, celery, oyster sauce, and soy sauce. Stir to mix all the ingredients.
Add the fried fish. Cook for a few minutes.
Best served with hot rice.
