Are you a pancit lover? If that’s a yes, then you’re really gonna be bestfriends with Kusinang Bicolana!

We have then featured Special Bihon Guisado and Pancit Canton Guisado here and yet here’s an easy noodle dish just for you! We are talking about Sotanghon Guisado served with chicken liver and our all-time favorite lechon kawali. (Good thing we shared our recipe in cooking Super Crispy Pork Belly Lechon Kawali here too!) With this noodle bursting with flavor, it will surely be a family favorite whether as a snack or main dish.

Sotanghon Guisado is a kind of noodle dish that can be easily cooked by stir-frying, just like other Filipino noodle dishes— Pancit Canton and Pancit Bihon. However, Sotanghon can also be prepared as a soup dish, which makes it unique from most other varieties. Indeed, this cellophane or glass noodle made from mung bean starch is one of a kind!

Are Sotanghon and Bihon the same?

These two are often mistaken to be the same, but they are not. How? The noodles are each made with different ingredients. As mentioned earlier, mung bean starch is for Sotanghon. However, Bihon is made with rice. To add, Sotanghon, which is translucent, has a smooth and slippery texture; Bihon does not.

What other dishes can you make with Sotanghon?

This type of noodle fits well with various kinds of dishes like stir-fries, soups, and even in spring rolls! No doubt; this is because this kind of noodle can easily absorb the flavors of any ingredients.

Cooking Tips

  • To make this noodle dish even better, you may increase the amount of crushed garlic sautéed in to the mixture. It does not only make the dish flavorful but also gives an appetizing smell.
  • Like many Filipinos common practice, you may mix in calamansi or lemon extract as its sour taste complements well with the garlicky taste.
