Background

Through the years, this sour-tasting food has become very common to Filipino families. Apart from serving this during occasions, people prepare this for their usual meals— of course best paired with some heaps of rice! In fact, this has become one of the topmost Filipino food here in the country. The word Sinigang is basically “stew” in English. It also translates to “sour soup.”

During the earlier times, tamarind or the common sampalok fruit has been used to give that sour taste to the stew. Now, it has evolved to tamarind powder available in stores. More than that, you can now alter sampalok with other sour-tasting fruits such as guava or mango, depending on your preference and its availability.

How do we prepare the shrimp?

Cleaning our main ingredient is the most crucial part of this cooking. Clean the shrimp thoroughly. Devein it, but (preferably) do not detach the head; this is a good source of flavors to the dish. Trust me!

How do we know that the shrimp is well-cooked?

Shrimps are gray in color when they are fresh from the waters. It becomes orangey when heated, or cooked. It also becomes juicy! Don’t overcook the shrimp as it will taste dry; then, you won’t enjoy it that much.

Cooking Tips

For busy moms or dads, it’s way easier and time-saving to use ready mixes. Mama Sita’s Sinigang na Sampalok is one of the best choices to get the perfect sour taste for our Sinigang; however, if you have fresh tamarind with you (and the luxury of time, of course!), it will give you the original or native taste of Sinigang na Hipon.

  • Minced garlic
  • Minced ginger
  • Sliced onion
  • Sliced tomato
  • Black pepper
  • Okra
  • Red chili
  • Chopped zucchini
  • Spinach
  • Kangkong (optional)
  • Spring Onion
  • Fish Sauce
  • Mama Sita’s (Sinigang na Sampalok)
  • Shrimp
  1. Add water in the casserole.
  2. Add garlic, onion, tomato, and black pepper.
  3. Wait until it boils.
  4. Add shrimp. Let it boil.
  5. Add zucchini.
  6. Add spinach or kangkong. Mix the ingredients.
  7. Add okra. Then, the spring onion.
  8. Add red chili.
  9. Add Mama Sita’s Sinigang na Sampalok. (Dissolve the powder using the broth from the pot. Once dissolved, gently pour it to the mixture.)
  10. Add the fish sauce. Then, mix.
  11. Your Sinigang na Hipon sa Sampalok is ready to serve!
