Background

The Menudo or ginamay originated from a Mexico cuisine and was adapted by the Filipinos during the Spanish colonization. This traditional dish is sautéed with pork and spices and stewed with vegetables and tomato sauce. 

Each ingredient in menudo is a huge factor that attributes to its distinct taste from other traditional Filipino stews like Afritada and Kaldereta.

What is the difference of Menudo with other Filipino classic stews?

Menudo is diverse with many ingredients such as the inclusion of several vegetables, fruits, spices and various bits of protein. Its sauce is a bit thicker than others.  Additionally, what makes it special is sliced hotdogs, which are also part of the mix and which children love!

When to know if liver spread is still good?

The average shelf life of liver spread is three days. Liver spread already has a heavy and distinct smell and it is not that easy to identify if already rotten. As much as possible, try to make use of fresh ingredients to really achieve that authentic Menudo taste.

Cooking Tips

  • To achieve greater results when cooking the pork belly, it is advisable to sauté it with a bit of soy sauce to really achieve the best flavor in the meat.
  • In cooking the dish, ingredients that are easily cooked such as the vegetables should be mixed in late to avoid having that hard overcooked bite.
  • Since it is a mixture of many ingredients, hotdogs should be sliced to small pieces to make sure they are cooked well.

  • Crushed garlic
  • Diced onion
  • Salt

  • Raisins
  • Cooking oil
  • Green peas
  • Tomato sauce
  • Tomato crushed
  • Pineapple juice
  • Cooking oil
  • Hotdogs
  • Carrots
  • Potatoes
  • Liver spread
  • Pork belly
  1. Prepare crushed garlic and diced onion.
  2. Heat oil in a pan.
  3. Over medium flame, sauté garlic and onion.
  4. Slice the pork belly into two-inch cuts.
  5. Add the pork belly, salt, pepper and bay leaves. Cook for 5 – 10 minutes.
  6. Pour in pineapple juice and let it simmer.
  7. Rinse, peel and slice the vegetables into small cuts.
  8. Add the potatoes, tomato sauce and tomato crushed, then mix.
  9. Add the chicken liver, soy sauce, cubed carrots and raisins and thoroughly mix.
  10. Add in the sliced hotdogs and green peas then let it simmer.
  11. Serve and enjoy!
