No one can resist this creamy Pork Binagoongan recipe. This pork dish is cooked with shrimp paste (alamang or bagoong in Filipino). This is best paired with newly cooked hot rice with some chilies and iced cold soft drinks on the side. Ingredients
- 800 grams of pork belly
- 2 pieces eggplant
- 10 cloves garlic
- 1 large onion
- 2 pieces tomatoes
- 3 tbsp shrimp paste
- 2 pieces of bay leaves
- Crushed pepper
- 1 cup water
- 3 pieces of long chilies
- 1 piece bell pepper
Step by Step Instructions
Step 1
Fry the sliced eggplant until cooked and set aside.
Step 2
Let’s saute crushed garlic, chopped onion and diced tomatoes until soft. Add the pork belly. Stir to mix. Cover and cook until the oil from the meat starts to render.
Step 3
Add Shrimp paste, bay leaves, crushed pepper, brown sugar, water and stir. Simmer for over medium heat for 30 minutes or until the pork is soft & tender.
Step 4
Once the pork is soft, turn the heat to a low setting. Add a cup of coconut cream and stir. Cook for a few minutes until the oil from coconut milk starts to render.
Step 5
Once the sauce is reduced, add the eggplant, chilies & bell pepper and stir them well. Ready to serve.
