Bicol express is primarily made of pork slices simmered on medium heat in coconut milk and shrimp paste. Enjoy this recipe with a serving of hot rice with an iced-cold soft drink on the side.

Ingredients
- 800 grams pork belly cut in cubes
- 10 cloves garlic
- 1 large red onion
- 2 tbsp shrimp paste
- Crushed pepper
- 2 pieces of bay leaves
- 1 cup coconut milk
- 3 pieces of long green chilies
- 3 pieces long red chilis
- 425 grams of whole mushrooms
- 227 grams of pineapple chunks


Step by Step Instructions
Step 1
Heat oil over medium heat in a frying pan. Add crushed garlic and chopped onion to the heated oil and cook until softened, occasionally stirring with a long spoon.
Step 2
Add the pork belly, shrimp paste, crushed pepper and bay leaves. Stir to mix all the ingredients. Cover and simmer over medium heat for 15 minutes.
Step 3
Add coconut milk and simmer for another 15 minutes.
Step 4
Add the sliced long green and red chilies, whole mushrooms and pineapple chunks. Stir and cover and cook for 5 to 10 minutes. Ready to serve. Enjoy and share.
