Background
The popularity of bagoong or shrimp (sometimes, fish) paste has risen from many decades ago. Bagoong is generally salty but can also have a spicy or sweet feel depending on how it is cooked and processed. When we buy from the grocery stores, they are usually sautéed and bottled in containers as part of the preservation process. However, raw shrimp paste is also very much encouraged in many cooking, especially in this Pork Belly Binagoongan, because it is easier to tame and adjust the taste of our dish.
How do we tame the taste of our binagoongan?
Add our star ingredient (binagoongang alamang) gradually, so you can control the level of saltiness of the dish. However, if you have added too much, you can neutralize the flavors by adding more tomatoes.
How do you know if the pork belly is tender enough?
Although the fatty part is tender when pricked, we always have to make sure that its tenderness is perfect for the dish. Allow enough time for the pork belly to cook. You may add pork broth so that it will be tenderized well. Add more broth if the water dries up fast.
Cooking Tips
- You can go for a fatty pork belly with this binagoongan. Why? It gives an incredible flavor when mixed with the sauce; the fat goes perfectly with all the delightful spice and shrimpy flavor.
- Adding the shrimp paste before the pork belly prevents the dish from becoming too salty. However, if you prefer a stronger taste, you can sauté the shrimp paste prior adding the pork belly.

- Cooking oil
- Crushed garlic
- Sliced ginger
- Chopped onion
- Pork belly
- Bay leaves
- Crushed pepper
- Tomatoes (remove the seeds)
- Bagoong alamang (shrimp paste)
- Green chilis
- Preheat a cooking pan and add oil.
- When the oil is hot enough, sauté the crushed garlic.
- Add the thinly sliced ginger. Then add the chopped onion.
- Add the pork belly, then mix.
- Add the bay leaves and crushed pepper.
- Cook it over medium heat until it becomes light brown.
- Remove the seeds from the tomatoes. Then slice it.
- Add the sliced tomatoes to the mixture.
- Mix
- Add bagoong alamang.
- Stir and cover the pan. Let it simmer for 8-10 minutes.
- When the meat is cooked, add the red and green chilis.
- Our Pork Belly Binagoongan is ready to serve!
