Hi to all foodies and aspiring cooks out there! Need a quick and easy, hearty meal? Well, our recipe today is perfect for you. One of the main ingredients is Pork Liempo! You had our Super Anghang Bicol Express Na Pork Liempo before; today, we serve you pork stew loaded with a lot of tomatoes! It’s also known as Kinamatisan, which is a Filipino word that roughly translates to any dish cooked in tomatoes.

The tomato is a fruit from the nightshade. Despite being a fruit, it’s generally prepared and eaten like a vegetable. It’s rich in an antioxidant called lycopene, which can help reduce the risk of heart disease and cancer. Definitely a must-add to the dish, right? But wait, there’s more! It’s also a great source of Vitamins C and K, Potassium, and Folate. When added to a dish, the sweetness and sourness taste becomes balanced. No wonder it’s an important ingredient in most kinds of dishes and has a variety of uses.

Is it okay not to add cooking oil when frying the pork belly?

It’s totally fine not to add cooking oil when frying the pork belly because it’s already quite fatty and it will release its own fat.

What kind of tomatoes should be used?

You can use almost all kinds of variety but the most common ones are the globe tomatoes. They are medium or large, round, and red – sometimes yellow tomatoes that you find in any store.

Cooking Tips 

  • When slicing the pork belly, they don’t have to be small and perfectly-shaped cubes because they will reduce in size slightly once cooked.
  • Because this dish is loaded with tomatoes, it can quickly go bad. So, for left-overs, place in an air-tight container and place inside the fridge, and then just reheat if needed.

  • 10 cloves garlic (crushed)
  • 1 medium onion (diced)
  • 1 carrot (chopped)
  • 1 potato (chopped)
  • 500 g pork belly (cubed)
  • 4 pcs tomatoes (sliced)
  • 3 pcs bay leaves
  • ½ tsp crushed pepper
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 2 tbsp tomato paste
  • ½ cup of water
  1. Set the stove on medium heat.
  2. Heat oil in a pan.
  3. Fry both sides of the pork for about 5 minutes or until the color turns brown.
  4. Set the pork aside.
  5. On the same pan, sauté the garlic and onion.
  6. Add tomatoes and cook until they are softened.
  7. Add the pork.
  8. Add 3 pcs of bay leaves and ½ tsp crushed pepper.
  9. Add 1 tsp salt.
  10. Add tbsp soy sauce and tsp oyster sauce.
  11. Add 2 tbsp tomato paste.
  12. Add ½ cup water.
  13. Cover the pan and simmer for 15 minutes or until the pork is softened.
  14. Add the potatoes and carrots.
  15. Cover the pan for another 6 minutes or until the potato and carrots are cooked.
  16. Serve and enjoy!
