Goto is another all-time Filipino merienda when it comes to comfort and relaxation. Its organic herbs and natural aroma will keep your tummy rumbling for more. This dish will not only comfort you but will also make you love lazy afternoons, especially on a rainy day.

Background

Goto is beef lugaw, a different variation of the usual rice porridge because of its unique inclusion of shredded Ox Tripe in its recipe. Its original name is arroz caldo con goto or arroz con goto, stemmed mainly from Spanish terms which mean “rice” and “soup” complimented with the Tagalog lingua, “goto” which means “tripe.” Goto is enjoyed at its highest capacity when adding condiments such as fish sauce, garlic bits, kalamnsi, and many more.

What is a beef tripe?

Ox tripe is a honeycomb-like beef part found in the stomach of an ox or cattle. It has this unique texture and taste a bit similar to liver.

What is the difference between Goto and Lugaw?

Goto is a type of elevated Lugaw that makes use of beef or ox tripe and many extra ingredients. Lugaw on the other hand, is simpler, for it makes use of usual proteins such as basic chicken and pork.

Cooking Tips

  • Initial boiling should be at least 10 to 15 minutes, to give it time to disinfect. In another pot of water, boil the rinsed out beef tripe for 2 to 3 hours this time to let it surely soften.
  • When cleaning the beef tripe, you can make use of vinegar to disinfect and remove unnecessary salt and impurities.

  • Onion
  • Ginger
  • Garlic powder
  • Ginger powder
  • Fish sauce
  • Cooking oil
  • Beef tripe
  • Honeycomb
  • Spring onion
  • Boiled eggs
  • Beef cube
  • Glutinous rice
  • Rice
  • Crushed pepper
  1. Wash thoroughly the beef tripe & honeycomb.
  2. Boil these for 10 – 15 minutes and drain the water.
  3. Wash and drain the tripe and honeycomb and boil to soften for 2 – 3 hours.
  4. Cut the tripe & honeycomb into thin slices
  5. Prepare hot oil in a pan.
  6. Prep the crushed garlic, sliced onion, and thin-sliced ginger.
  7. Sauté garlic, onion, ginger with the tripe and honeycomb.
  8. Add garlic powder, ginger powder, and pepper.
  9. Add one cup of Glutinous rice and then another cup of regular rice.
  10. Sauté for a few minutes.
  11. Add fish sauce.
  12. Add water and let it boil until the rice becomes soft.
  13. Add the beef cube then cover the pot.
  14. Add more water if necessary.
  15. Plate in and put spring onions and boiled eggs on top.
  16. Serve hot.
