Delicious, healthy, appetizing, and colorful, our Fish with Tausi isn’t just food for the stomach, but also food for the eyes— at least before the plates are empty! 

Background

Our dish today mixes native Philippine cuisine with that of Asian, specifically Chinese. Tausi, which is fermented black soy beans, is a popular flavoring used for years now in China. Almost always available in the market, even in the Philippines, you can purchase this either dry or soaked in brine, and use it to give a unique taste of umami to your fish, meat, and vegetable dishes. Salty, it is recommended that you buy this in just small amounts, given that it should also be consumed in small quantities. However, if you have excess, store this in a jar and refrigerate.

How do you release the flavors of the tausi?

If you really want to taste that savory umami (which is surprisingly the “fifth basic taste”), you can mash your tausi even just a little after letting the dish simmer over medium heat.

Is it recommended to still add salt when you use tausi?

You can skip salt, because as mentioned, tausi already has an intense taste; however, if you really wish to use that and/ or other seasonings, you can soak your tausi in water to drain it off of the excess flavors. You can repeat this if the need arises, or depending on your taste.

Can you use left-over fish for this dish?

Definitely yes! If you have excess of your Crispy Fried Fish from lunch or dinner, why not toss additional flavors in, and make another sumptuous dish out of it? Then making this dish would be way easier for you! Just start with Step 4 below.

Cooking Tips 

  • Closely monitor the amount of tausi you add in the dish. Don’t pour the entire can in at once. Taste your cooking every time you add another scoop of this ingredient. Otherwise, you might have a hard time getting the perfect taste of your fish dish.

  • 800 grams Fish (Mullet)
  • Cooking oil
  • 5 cloves Garlic – crushed
  • 1 medium size Onion
  • 1 small piece Ginger
  • 1 big size Tomatoe
  • 2 pieces Carrots
  • 1/2 cup sliced Mushrooms
  • 1 small piece Green bell pepper
  • 3 pieces Bay leaves
  • 180 gram can Tausi
  • 2 cups Water
  1. Cut the fish into pieces.
  2. Sprinkle with salt and pepper.
  3. Fry the fish until golden brown on both sides. Once cooked, set aside.
  4. In a separate pan, sauté garlic and onion.
  5. Add sliced ginger. Mix.
  6. Add sliced tomatoes.
  7. Add carrots and mushrooms, then green bell pepper.
  8. Continuously stir.
  9. Add bay leaves.
  10. Mix in the fried fish.
  11. Add tausi.
  12. Pour water, then stir.
  13. Let it simmer in medium heat, until liquid is lessened.
  14. Transfer to a serving bowl.
  15. Serve with hot rice. Enjoy!
