While it has already been explained how the Classic Bicol Express was invented, see Special Bicol Express the birth of Chicken Bicol Express was inspired from the above-mentioned native cuisine. Thanks to Tita Cely Villanueva Kalaw for her invention of this spicy cooking. Basically, this dish calls for boneless chicken breast or thigh meats instead of the usual pork used. And the rest goes exactly how the classic does. 

Although chilis are one of the major recipe to achieve its classic taste, is it possible to have a substitute when it is not available?

Chilis are the must haves when preparing a Bicol Express; however, there really would be times when our location cannot provide our needs. It ain’t a big deal because now, you can have peppers instead. To tame the heat, just scrape off the seeds before slicing it so that the flavor of the chilis be attained without getting a lot of spice.

Is it healthy to eat Chicken Bicol Express?

It is with no doubt that the Chicken Bicol Express is one healthy dish. Aside from loads of green and red chilis, which give a really good spice to the taste, the chicken itself is low in cholesterol, that is if the skin will be excluded. Also, the shrimp paste condiment is also beneficial to the human health as it contains essential fatty acids known as DHA. Opting for a fresh shrimp paste is also recommended.

Cooking Tips 

  • For a consistent, smooth, and creamy sauce, cook in a simmer when boiling the coconut milk. Apart from producing a good texture, the benefit of cooking on low temperatures (as when you simmer) is that it retains the food’s nutritional compounds like proteins and vitamins, which rather break up on high heat.

Though the recipe calls for boneless chicken meat, it would also be a thrill if you add some bones in! Just make sure it is cut into smaller bits, and be careful of its sharp edges so that you won’t get in trouble when eating

  • Onion
  • Ginger
  • Pepper
  • Shrimp paste
  • Tomatoes
  • Red chilis

  • Coconut milk
  • Bay leaf
  • Pineapple (sliced)
  • Cooking oil
  • Chicken
  1. Sauté garlic, onion, ginger and sliced tomatoes.
  2. Add the chicken, pepper and bay leaf.
  3. Add the juice from the pineapple.
  4. Mix thoroughly and cook over medium heat.
  5. Add the shrimp paste.
  6. Let it simmer for 8-10 minutes.
  7. Add the coconut milk, and then pineapple slices to sweeten.
  8. Add green and red chilies.
  9. Mix thoroughly and cook for another five minutes.
  10. Serve hot!
