We all know that our fave adobo’s rich history. Check out Chicken Liver Adobo & Pork Belly Adobo. But little do we know yet about our special ingredient for today— mushroom!
Studies cannot trace when the first time mushroom sauce was discovered. But for many years now, mushroom has been wildly eaten in many countries because of its delicious taste. In the later years, it has also been discovered that mushroom sauce is good for topping various kinds of food. No wonder we love to mix it with our chicken adobo!
What else goes best with adobo?
Yes, you might’ve already come across a similar question in our previous adobo recipe FAQs, but here’s an update! Apart from warm rice, our most-loved native dish also goes well with veggies! Try pairing it up with fresh salad, say ones with carrots and greens!
How do we make the chicken in adobo tasty?
A secret in making our main ingredient a little more delicious is to treat it before cooking. Marinating is the key! Allow the chicken to absorb spices and seasonings before placing it in the pan for cooking. Wait till the dish is done, and taste the difference for yourself!
Cooking Tips
When cooking adobo in mushroom sauce, keep the heat in medium-high level as not to overcook or burn it. Simmer; don’t boil. Boiling it will just leave you disappointed because it will take away the juiciness and tenderness of the chicken. Medium-high heat is recommended since we are trying to tenderize the chicken, little by little. Our potatoes should also undergo the same heat level so as not to mash them.

- Cooking Oil
- Garlic
- Onion
- Black Pepper
- Chili
- Soy sauce
- Laurel leaf
- Sliced potatoes
- Fried Garlic
- Mushroom slices in butter sauce
- Chicken Meat
- Heat oil in a pan.
- Sauté garlic and onion until the color turns to brown.
- Add chicken bite-size slices.
- Add the black pepper and then the bay leaf.
- Mix thoroughly to evenly cook.
- Add soy sauce and cover to boil in a medium heat for 5-8 minutes.
- Add the potatoes to the mixture, and cover the pan.
- Let it boil.
- Add the sliced mushroom (in butter sauce), and mix it regularly.
- Allow it to simmer for another 3-5 minutes.
- Add chili.
- Transfer to serving plate.
- Sprinkle with chili and top with egg (optional).
- Serve hot.
