Spinach in Coconut Milk

Spinach in Coconut Milk

What’s your favorite food cooked in coconut milk? I bet there’s a lot in your mind right now. Well, get ready because today, another dish will be added to your list– Spinach in Coconut Milk! It’s filled with fresh greens and savory flavors, and of course, it’s super creamy! To add, it fits the budget!

Before anything else, let’s learn more about why our dish is really a go-to food. Not only that it’s cost-efficient, our star of the day– spinach – is a good source of nutrition. It’s infused with health benefits that assist in normalizing blood pressure, improving eyesight, decreasing stress levels, and preventing cancer. Versatile, it can be added to a variety of dishes like stews, broths, salads, pastas, sandwiches, and even in dips. Creamed spinach is just one of the dishes that use this superfood.

In other countries, people usually use cream instead of coconut milk and add browned mushrooms and fried shallots as main ingredients. However, since meat and vegetables cooked in coconut milk are a staple in Filipino cuisine, it’s more common in the Philippines to use coconut milk.

Can canned or frozen spinach be used in this dish?

It’s needless to say that fresh spinach is better because it’s healthier. However, if you can’t find any in the supermarket, you can definitely use canned or frozen spinach.

Can cream be used as a substitute for coconut milk?

Yes! In fact, in other countries, it works the other way around – coconut milk is the substitute for cream.

What is best served with spinach in coconut milk?

This veggie dish goes with many other dishes like roasted chicken, grilled pork, or fried fish. You can also upgrade the dish itself a bit by adding some nuts or fruits.

Cooking Tips

  • When buying spinach, always choose the ones with fresher leaves, and don’t worry too much about their slimy texture because this will just lessen once they’re mixed with other ingredients and cooked.
  • It’s best that you only buy the amount of spinach you need because it’s recommended that you cook it on the same day you bought it.

Chicken & Vegetable Lumpia

Chicken & Vegetable Lumpia

Filipino lives matter, because who is going to make Lumpia? I bet you can go anywhere in the world but lumpia will never be the same compared to how Filipinos make it. This is the perfect entry when it comes to Filipino cooking; everyone loves it!

This popular dish should always be present when it comes to gatherings. No official Pinoy gathering is one without it. Enhance this version of our all-time favorite with this recipe on Chicken Vegetable Lumpia— a new and healthier version of the legendary crispy roll for you and your family.

Background

Lumpia is derived from the famous Chinese cuisine, spring roll. It is also an all-time favorite appetizer along with dim-sum, chicken wings, and many more. This dish is not only popular in China, but along with Indonesia as well.

It was said that the dish was brought by voyagers from Fuji and was introduced to the Southeast Asian food culture during the ninth century. In recent times, lumpia is a best-loved food item when it comes to birthdays, fiestas, and many more!

What is a lumpia wrapper made of?

The wrapper in the Philippines is also called Popiah and is made out of cornstarch, wheat flour, and water.

Can you store the lumpia?

Usually prepared lumpia often lasts up to 3 to 5 days in the fridge to chill (the ones that are not yet fried). Keeping them frozen is also an option just make sure the pan is pre-heated properly before frying.

Cooking Tips

  • It is important to thoroughly dice and mince the vegetable chicken— big cuts could be harder to fold with the wrappers.
  • When covering the lumpia with the Popiah, it is best to keep each sheet moist in cold water so that it isn’t too dry to help fold and cover easily. Traditionally, Filipinos apply water in the ends to create a temporary stick to attach the fold well.
  • Waiting time of 3-5 minutes should be enough time to fry lumpia in cooking oil to get its golden brown and crispy texture and usually takes 6-8 minutes if frozen.
