Nilagang Baka Recipe

Ang Nilagang Baka ay isang paboritong soup ng mga Pilipino. Ito ay laman ng Baka na pinakuluan na may timpla ng buong paminta, sibuyas at patis. Madalas na nilalagyan ito ng mais, patatas at green vegetables tulad ng bok choy o cabbage. Ito ang pinaka simpling recipe ng mga Pinoy pero malasa at masustansya. Madalas ay comfort food ito ng mga Pilipino kasi bukod sa madaling lutuin ay madaling makuha ang mga ingredients nito. 

Maraming paraan ng pag luto ng Nilagang Baka. Ang iba ay nilalagyan ito ng saging (banana) at carrots pero sa recipeng ito madalas na nilalagay ko ay mais at cabbage kasi ito ang paborito ng mga anak ko.  

Simple lang ang pag luto ng Nilagang Baka. Pakuluan lang ang karne ng baka, lagyan ng mga pampalasa at lutuin hanggang sa lumambot ang karne. Lagyan ng mais at cabbage at timplahan ng mais.

Ang sikreto sa malinis at malinaw na sabaw ay ang pag alis ng scum sa sabaw nito sa mga unang minuto ng pag pa kulo. Pag ka na alis na ang scum, set the heat to low – medium at pakuluan hanggang sa maluto.

Mga Sangkap:

  • Beef meat
  • Onion
  • Ginger
  • Whole Peppercorn
  • Fish sauce
  • Beef broth (optional)
  • Corn
  • Chinese cabbage

Paano Magluto ng Pork Igado

Step 1

Sa isang malaking lutuan ay ilagay ang karne ng baka. Lagyan ng tubig, sakto para mapa kuluan ang karne. Gamit ang salaan (skimmer) alisin ang scum sa sabaw nito. Takpan at pakuluan.

Step 2

I lagay ang sibuyas, luya, buong paminta at fish sauce, takpan at pakuluan ito sa low to medium heat. Bantayan at siguraduhing hindi umapaw ang sabaw nito.

Step 3

Pagka malambot na ang karne ay ilagay ang mais. Takpan at pakuluan hanggang sa maluto. Ilagay ang chinesse cabbage, turn off  the heat and cover.

Step 4

E serve ng ma init with patis, lemon and chili on the side. Masayang kainan mga Dabarkads!

Background

Goto is beef lugaw, a different variation of the usual rice porridge because of its unique inclusion of shredded Ox Tripe in its recipe. Its original name is arroz caldo con goto or arroz con goto, stemmed mainly from Spanish terms which mean “rice” and “soup” complimented with the Tagalog lingua, “goto” which means “tripe.” Goto is enjoyed at its highest capacity when adding condiments such as fish sauce, garlic bits, kalamnsi, and many more.

What is a beef tripe?

Ox tripe is a honeycomb-like beef part found in the stomach of an ox or cattle. It has this unique texture and taste a bit similar to liver.

What is the difference between Goto and Lugaw?

Goto is a type of elevated Lugaw that makes use of beef or ox tripe and many extra ingredients. Lugaw on the other hand, is simpler, for it makes use of usual proteins such as basic chicken and pork.

Cooking Tips

  • Initial boiling should be at least 10 to 15 minutes, to give it time to disinfect. In another pot of water, boil the rinsed out beef tripe for 2 to 3 hours this time to let it surely soften.
  • When cleaning the beef tripe, you can make use of vinegar to disinfect and remove unnecessary salt and impurities.

  1. Wash thoroughly the beef tripe & honeycomb.
  2. Boil these for 10 – 15 minutes and drain the water.
  3. Wash and drain the tripe and honeycomb and boil to soften for 2 – 3 hours.
  4. Cut the tripe & honeycomb into thin slices
  5. Prepare hot oil in a pan.
  6. Prep the crushed garlic, sliced onion, and thin-sliced ginger.
  7. Sauté garlic, onion, ginger with the tripe and honeycomb.
  8. Add garlic powder, ginger powder, and pepper.
  9. Add one cup of Glutinous rice and then another cup of regular rice.
  10. Sauté for a few minutes.
  11. Add fish sauce.
  12. Add water and let it boil until the rice becomes soft.
  13. Add the beef cube then cover the pot.
  14. Add more water if necessary.
  15. Plate in and put spring onions and boiled eggs on top.
  16. Serve hot.

Background

Lamb meat is rich in protein, vitamins and contains a rich nutritional value. The lamb is also known for its tenderness and mild flavors.

One pot cooking was taken back from the Bronze Age of about 2,500 to 800 BC when a large population served meals such as stews, porridge and soups. Food were served in single bowls, and by then, food were cooked in a single pot to signify the ingredients to create one full meal.

How is lamb meat expensive?

Lamb meat is expensive for being one of the rarest protein to exist in the market. One contributing factor that makes it costly is because lamb is smaller in size compared to other animals. One kilo of meat usually ranges from Php 999.00 to almost Php 2000.00 depending on the part.

What is the benefit of one-pot cooking?

One pot cooking means diversity with minimum cleaning time, it will save you all of the time to invest on the food you are cooking rather than cleaning the aftermath.

Cooking Tips

  • Lamb is best to marinate with the standard of 4-5 hours before the actual cooking.
  • If there is leftover food, there is a possibility that it can be much tastier when the flavors are given time to really sink in with the protein overnight.

  • Lemon

  • Cinnamon bark
  • Cloves
  • Roasted red bell pepper
  • Turmeric
  • Tomato paste
  • Basmati rice (long grain)
  • Water
  • Beef cube
  • Black olives
  1. Marinate the lamb chops with salt and pepper.
  2. Add garlic, rosemary, cumin and lemon.
  3. Add olive oil.
  4. Mix all ingredients and coat the meat thoroughly then set aside.
  5. In medium heat, heat a cooking pot and add olive oil.
  6. When the oil is hot, sear the lamb chops on a medium heat.
  7. Set aside after 3-5 minutes or when each sides turn brown.
  8. Slice up one onion.
  9. Using the same pot, sauté the sliced onion.
  10. Add cinnamon bark and cloves.
  11. Crush 1 bulb of garlic and then mince.
  12. Add minced garlic to pot.
  13. Prep roasted red pepper by removing seeds and then slice into small pieces.
  14. Add the sliced red pepper to cooking pot.
  15. Add turmeric and tomato paste, then mix.
  16. After mixing, add basmati rice (long grain), then add water.
  17. Add one beef cube.
  18. Season with salt and pepper then mix.
  19. Put back the lamb chops in cooking pot along with the newly made mixture.
  20. Slice black olives then add on pot.
  21. Thoroughly mix.
  22. Cover the pot and let it simmer for 10-12 minutes or until the rice is cooked.
  23. Remove lid and let it simmer for a few minutes.
  24. Now it’s ready to serve!

You deserve a delicious taste of the Land of the Rising Sun, more than just by heating that water and adding it to a cup of instant noodles. While preparing the latter is easy as 1, 2, 3, what is adding a little more effort for a full satisfied stomach while experiencing the culture of Asia in every bowl?

We’ll make today’s dish a little different from the common ramen we find in restaurants. I’ll teach you step by step how to cook it, but let’s have a little background first about what we’re going to serve on our dining table.

Background 

Ramen roots from Asia. While it’s commonly attributed to Japan, as it is very popular in that country, it is really to have originated from the Chinese. The term “ramen” itself is said to have been from Chinese terms that mean “pull” and “noodles.” Other sources say the words meant “ancient noodles,” or “handmade noodles.” I think these actually make sense, because the noodles were originally hand-pulled by the cooks. 

What are the common ingredients of ramen?

The two most important ingredients of ramen are wheat noodles and broth. However, we’re gonna make a brave twist on the dish by replacing one of its main ingredient (noodles) with bean sprouts (or togue in Filipino). We’ll be adding other vegetables, too.

Cooking Tips

  • We commonly use salt to make our dishes more flavorful, but don’t use this in making your beef broth.
  • The secret to cooking delicious food starts with buying the right ingredients. Make sure you choose only the freshest of ingredients!

  • Garlic
  • Olive oil
  • Pepper
  • Onion
  • Spring onion
  • Brown sugar
  • Oyster sauce
  • Soy sauce
  • Cornstarch
  • Egg
  • Bok choy
  • Carrots
  • Broccoli
  • Water
  1. Carefully wash the beef and place in boiling water until the meat is tender and soft.
  2. Remove the water from the pot.
  3. Rinse beef.
  4. Add water and boil again.
  5. Add onion, pepper, and bay leaves.
  6. Add fish sauce or patis, and carrots.
  7. Set aside and prepare for the next step.
  8. In a separate bowl, mix garlic paste, oyster sauce, pepper, soy sauce, brown sugar and paprika.
  9. Thinly slice beef loin, and marinate in the prepared mixture for 15 minutes.
  10. Heat the grill pan, and add the marinated beef loin. Make sure to cook both sides.
  11. Prepare the white onion, lemon, box choy, broccoli, carrots, bean sprout, chili flakes, and egg.
  12. Arrange the vegetables in a bowl and top with sliced beef loin.
  13. Add the Beef Stock
  14. Top with eggs & chili flakes.

Background 

Many years ago, the Philippines was under the Spanish rule; one of the biggest impacts of that colonization is Catholicism. This refrained devotees from eating meat six Fridays of the year, during the Lenten Season. In lieu, people discovered that mung beans (monggo) are a good substitute for meat. Until these days, mung beans have been a favorite especially for carinderia and home servings. 

Our dish today being a fusion of beans and meat, let’s talk about bulalo! Do you know that our cold-weather comfort food is native to our country’s Southern Luzon region? It is believed to have been invented in Batangas, and from there, has come to be cooked in homes all over the PH. This soup takes time to prepare— around three hours or so— but surely is worth every drop of waiting! 

How to know if the beef shank is tender enough?

Well-cooked beef shank falls off the bone! Also you know you’ve cooked it right if fat is melted into broth. These will be achieved by patiently cooking for at least three hours. 

Does it take too long to cook mung beans?

Cooking mung beans does not take as much time as cooking the beef shanks. 20 minutes is enough when boiled in medium-low heat.

Cooking Tips 

  • Knowing that you have good quality mung beans is an extra point to the plate! How to identify perfect mung beans for our dish? Good quality mung beans sink in water, while the not-so-preferred ones float. Do this technique before cooking so you get the crème de la crème of your legumes.

  • Beef shank (bulalo)
  1. Sprinkle salt to Beef shank.
  2. In a large cooking pot, sauté garlic, onion, and tomato.
  3. Add the laurel leaves and black pepper. Then, mix them.
  4. Add the Beef shank and fish sauce, let it simmer until cooked and becomes tender.
  5. Turn the Beef shank to its other side to cook the one facing the cover.
  6. Add water to level of the beef shank and wait till it boils.
  7. Add water. Cover until it boils.
  8. Check if the meat is tender.
  9. Add the mung beans. Then, stir.
  10. Cover the cooking pot and let it cook in medium heat.
  11. Stir regularly.
  12. Add water if necessary. (Always check and make sure to add water to the right consistency of the beans.)
  13. Optional – You can add beef broth cubes. In this cooking, I just preferred the natural flavor coming from the beef shank. Really tastes good.
  14. Your Ginisang Monggo with Beef Bulalo is now ready to serve!
